these goals are achievable without proxmox, but there’s nothing wrong with using it; however it will give you a much steeper learning curve if you’ve never managed KVM/QEMU based virtual machines or software defined networking before.
why proxmox? how do you intend to use mx linux, casa os, and windows? do you intend to use multi-booting with proxmox or using the each os as a proxmox virtual machine?

My job requires me to work w KVM/QEMU utilities on x86 architecture and utm is dog slow since I have an m2 MacBook.
Instead I use ssh into X86 servers; hence the keyboard mapping woes
detoriation of their gui is a great way to put it; i’ve been using mac’s on and off for since 2004 and their gui used to be top notch, but it it feels that all the user experience changes that have been foisted upon mac’s gui is done so without consideration for their original gui’s so now they’re in this strange, semi-working state.

I switch between multiple desktops w one dedicated to the terminal and dragging doesn’t seem to work when switching to another desktop
I use vim; hence the difficulty w remapping the keys and the Mac’s belong to my employers.
I would never buy a Mac and I only use Linux so it doesn’t make sense to grow accustomed to Mac’s quirks; especially so since only every other employer provides Mac’s.
do you know of any similar projects in the opposite direction? (ie linux to mac)

same here but permanently since i can only chose between mac and windows for work laptops since leaving the few employers that support linux laptops.
i had to remap the globe/fn key to control since it sits in the control space and i struggle daily with copy/paste and i REALLY MISS the scroll-wheel-click/shift-insert copy/paste; i have to use a context menu for both.
it sounds like something underlying is wrong, so would test everything that is underlying your system.
a memtest is the easiest first check. i wouldn’t rely on the one that’s on your system since it could be bad too, but it’s still worth it give it a try since it only takes a few seconds. if it finds anything, then there’s definately something wrong with your hardware.
instead, i would rely on a usb stick with the ubuntu image you downloaded. first verify that the checksum for the ubuntu image you have on a trusted computer is the same that ubuntu has on its website. then copy it to your usb stick and then use memtest from there. if it comfirms that your ram is okay, use ubuntu’s installation tools to verify that image on the usb stick is good; google or deepseek can show you how with easy to copy/paste commands.
in your shoes, i would re-install because at his point because then there’s confidence that the base steps are verified and should be working correctly and then you can move onto othere testing strategies if you continue to experience the same behavior.

the reaction makes sense; these organizations are modeled after for-profit corporations since that’s where most of its leaders come from and oriented towards simpler modes of funding like the american gov’t; this is effectively a disaster for this sort of posture and it’s hard from them to imagine any other form.
i wonder if it’ll save any time/space if you make iso images from your bluray’s with something like dd and mount them when you want to play them, instead of ripping their contents.
HEAVY emphasis on the words “labor of love” … should be getting paid for this and i know for a fact that people who do this professionally make around $200k a year for doing it becuase i worked with them for up until a couple weeks ago at old-silicon.
